Greek Island Salad
Put a little Greek folk music on the record player while you're doing the cooking for your party and enjoy its tremendous vitality.
1 large firm tomato
1 cucumber
1 red onion
3/4 cup freshly cooked (not canned) garbanzo beans, chilled
1 small clove garlic
1 tablespoon fresh basil
1 tablespoon fresh oregano
1/2 cup red wine vinegar
1 tablespoon frozen apple juice concentrate
1/2 cup hoop or other nonfat, unsalted cheese
Cut tomato into wedges. Peel cucumber, slice in half lengthwise, scoop out the seeds, and slice. Slice onion. Put vegetables in a salad bowl, press garlic on top, add herbs, vinegar, and apple juice concentrate. If you use dried herbs, use only 1/2 tablespoon of each. Mix thoroughly. Add cheese cut into small pieces. Allow to marinate at least 2 to 3 hours.
