12 large eggs
2 large white potatoes or several small red potatoes, boiled
1/4 cup finely chopped onion
1/4 cup minced fresh parsley
1/4 cup finely chopped celery
2-3 tablespoons hot, spicy mustard (to taste)
Saffron or curry powder for coloring
Paprika for garnishing
Dash of red wine vinegar

Hard-boil the eggs and cool quickly. Slice in half lengthwise and scoop out the yolks. Discard - that's right, discard—the yolks and rinse the egg white halves to remove all traces of yolk.
