2 cups homemade, defatted chicken stock
1 red pepper, cut into strips, or 1 small jar pimientos rinsed with fresh water and drained
1 small onion, diced
1 clove garlic, minced
1 stalk celery, diced
1 cup fresh peas or 1 package frozen baby peas
1 teaspoon poultry seasoning (non-salt variety)
1 cup raw wild rice or 1/2 cup brown rice and 1/2 cup wild rice
2 tablespoons chestnut or walnut pieces

Sauté vegetables and seasoning in small amount of stock until tender. Add remainder of stock and washed rice. Cover and simmer 30 to 45 minutes, until rice is tender and water is absorbed. Remove from stove and let stand for 10 minutes. Place rice in serving dish and garnish with nuts.
