Poached Fresh Pears
with Raspberry Mint Sauce


6 medium fresh pears, ripe but firm
1 quart unsweetened pear nectar (or other fruit juice) for poaching
6 strips lemon peel
1 package (10-12 ounces) frozen raspberries, thawed (Fresh if in season)
1/2 cup honey
1 tablespoon vanilla extract
3 tablespoons cornstarch dissolved in 1/4 cup water
6 fresh mint leaves

Peel pears and core from the bottom with an apple corer. Leave stem on. Place in saucepan with enough juice to cover. Add lemon strips. Bring to a gentle boil and poach until tender (about 15 minutes or until fork easily pierces to center). Drain and set pears on a serving dish. Place thawed raspberries in blender or food processor. Blend and strain to remove seeds. Place in a saucepan and bring to boil. Add honey, vanilla extract, and cornstarch in water. Stir until thickened. Remove from heat and pour raspberry sauce over pears, garnish with mint leaves next to the stems. Chill 1/2 hour before serving.
